For over 60 years now, the Paulos family has brought
Fine Dining to the Desert.

When John and Julia Paulos moved west from Minnesota in 1944 Tucson was still a small town with few dining options. They opened “The Flame Room “  in the thriving downtown area.

When a fire destroyed the building in 1954, they found another location at 4915 E. Speedway. The new  “Paulos Steak & Chop House” opened in a former Pottery shop, a beautiful building which enclosed a large patio. The building was remodeled by John Paulos, leaving the original patio and stone fireplace intact.  For  49 years the family served the needs of Tucsonans and visitors.

When John Paulos died suddenly in 1972, his son Nick took over and business thrived. The Paulos’ became known not only for the great Prime Rib and steaks, but the lounge was a happening nightclub. Weekends the guests were found three-deep at  the bar, and no-one  went home early.

In 1993 The Paulos Restaurant in Tucson closed. The City lost an enduring landmark.

In 1996 Nick and Jennifer, along with nephew George Bass opened the Amado Café, and there they remained for 11 years.

A country atmosphere and great food were its’ path to success, and through those years they built a strong and loyal patronage.

In 2006 They opened Solaris Restaurant bringing their lavish Greek and Mediterranean flavors to the residents of Green Valley, AZ.

And now– a new chapter: The Olives Bistro
